300g chicken mince
1 tbsp dark soy sauce
1 tbsp sesame oil
3 garlic cloves, minced
1 tsp red chilli flakes
1 tsp ground cumin
½ tsp Chinese five spice
¼ cup fresh chives, finely chopped
1 tsp MSG (optional)
Wonton wrappers
2 garlic cloves, finely grated
1 tsp sugar
½ tsp Chinese five spice
1 tsp sesame seeds
1 tsp chilli oil
1 tbsp vegetable oil
2 tbsp sesame oil
1 tbsp dark soy sauce
3 tbsp reserved wonton cooking water
Make the Filling
In a large bowl, mix together the chicken mince, soy sauce, sesame oil, garlic, chilli flakes, cumin, five spice, chives, and MSG (if using) until well combined.
Assemble the Wontons
Place about 1 teaspoon of filling in the center of each wonton wrapper. Wet the edges with water, fold into your desired shape, and press to seal firmly.
Cook the Wontons
Bring a pot of water to a boil. Add the wontons and cook for 3–4 minutes, or until they float. Reserve 3 tbsp of the cooking water before draining.
Make the Spicy Sauce
In a heatproof bowl, combine grated garlic, sugar, five spice, sesame seeds, chilli oil, and soy sauce.
Heat the vegetable oil and sesame oil in a small pan until hot. Carefully pour over the bowl to sizzle and activate the aromatics. Stir in the reserved cooking water to create a smooth sauce.
Toss & Serve
Add the cooked wontons to the sauce and toss gently until evenly coated.
Serve hot, garnished with extra chives or sesame seeds if desired.
